Blackbird Foods was founded by Mark Mebus, chef and owner of Philadelphia’s award winning Blackbird PIzzeria, in 2012. After catering a baby shower for one of the owners of NYC’s popular Terri restaurants with his signature seitan, the question was posed, “Why isn’t this available everywhere?” The next day, the staff at Terri’s central kitchen was trained and a new company was formed. Today, over thirty restaurants nationwide feature Blackbird Foods Seitan on their menus. Blackbird Foods has also recently made its seitan available for retail, with four flavors available. Mark is likely busy in the kitchen right now perfecting recipes for new products.
